I’ve seen Japanese scripts written in many ways. One is vertically from right to left (I’ve seen this with kanji and I think with hiragana), another is horizontally left to right like English (I’ve seen this with kanji, katakana, and hiragana). How do you know when to use each formation?

Actually, there is no “set” formation. There are just different ways to write it.
