Q&A: What is some decent recording software?

Question by been there- done that: What is some decent recording software?
I want to make a demo to send to restaurants of me playing jazz standards using an electronic keyboard or an acoustic piano. My current setup has been to play the keyboard through the amp and record from Windows Movie maker with an 1/8″ jack microphone plugged into the computer. I am getting decent quality recordings. The main problem I am having is that when I burn to the CD,even if I turn the volume up, the recording doesnt sound very loud. I would like to get a software mixer to solve this problem. Anyone know of any freeware available that is not just a demo? I know you can spend $ 100 of k on a setup but I am not trying to make a major motion picture soundtrack, just something that is functional in making a decent recording that I can package and send to potential clients.
