For example, when i’m taping a conversation, do I have to stop every 2 seconds to move the camera to the other person’s face and shoot another sequence of teh movie?

nope, film it continuously for every camera angle… so if want 3 angles shoot the scene three times then you edit the 3 together making the cuts you want.
