for the thai (เรเชล) how come the first letter, representing ay has to be put? wouldnt that make it ayrachel

Japanese: The katakana would be レイチェル. I’d find phonetically compatible kanji, but it’s hard to find one for the チェ sound.
Chinese: The Hanzi can be 蕾切尔, though 蕾切爾, 瑞秋, and 瑞鞦 can also be used. I suggest asking a native speaker for a proper pinyin transliteration, there is a lot of bad information floating out there on this subject.
If this is for a tattoo I strongly warn you to brief through hanzismatter.com as a caveat.
