シリーズ「ザ・メイキング」。身近な製品がどのような技術を使ってつくられていくのかを追い、モノの成り立ちと科学技術の関わりを伝えます。今回のテーマは、「手作りのしょう油」。日本独自の調味料「しょう油」。発祥地は和歌山県湯浅町と言われている。しょう油は 鎌倉時代中国から伝わったみそが起源と言われ、 みそ製造の際、樽の底に沈殿した液汁が調味料として発達し「しょう油」となったと伝えられている。しょう油の主原料は、 うまみを作る「大豆」、 香りを作る「小麦」、 うまみを引き出し 腐敗を防ぐ「塩」。小麦は あらかじめ煎って砕いておき、 大豆は洗浄して水に浸した後 圧力釜で蒸す。 蒸し上がった大豆を圧力釜から取り出し、その大豆に煎った小麦と 種麹菌を混ぜる。その後、麹室に送られ、 湿度・温度を一定に保ちながら4日間かけて菌を繁殖させる。しょう油の仕込み作業は、冬場に行われ、6～7月の発酵の最盛期に諸味は熟成する。麹の発酵に合わせて、カクハン作業をくり返し、 しょう油になるには約1年半かかる。 サイエンスチャンネルのサイトはこちら：sc-smn.jst.go.jp
